This week I’m aiming to eat less meat. Two of my family members have recently faced this challenge and in the spirit of supporting them, my meal plan will be a bit more vegetarian in nature.
Monday: Peach Arugula Salad from Skinnytaste and grilled Yves “sausages”
Tuesday: Soup and grilled cheese
Wednesday: Grilled zucchini and vegetarian burgers
Thursday: A third meal planning attempt for homemade pizza – goat cheese, prosciutto (on Lenny’s half), spinach
Friday: Dinner out at SunFest
