Greek Quesadillas

The Greek Quesadillas from Damn Delicious were perfect for a hot summer night demanding of little oven-on time. The homemade Greek yogurt tzatziki sauce was particularly tasty and the flavour combo of the quesadilla was reminiscent of high end sandwich / Greek salad combination. And besides, you can’t go wrong with melted cheese.

I opted to use our Silpat instead of parchment paper but next time might experiment with it instead to see if it makes for a crispier bottom tortilla.

The tzatziki sauce is not pictured, but was a delicious dip to complement the quesadilla.

 

One Pot Cheesy Smoked Sausage & Pasta Skillet

The One Pot Cheesy Smoked Sausage & Pasta Skillet from Yellow Bliss Road turned out pretty well! I’d classify this one in the 20-minute-delicious-weekday meal category. I think I’ll tuck it away to try again sometime in the future with the proper Italian-seasoned sausage though; The grocery store that I went to didn’t have a lot of options so I went with a traditional Polish sausage, and it just wasn’t quite right. The combination of milk, canned diced tomatoes, and chicken stock was quite delicious and fragrant. Definitely a meal worth trying!

A “Pre-cheese” shot. I am always SUPER excited (actually) to not have to wash the colander. This recipe has you cook the pasta in the liquid but then to keep it and not strain it. 😀

Maple Ginger Turkey Breast and mashed sweet potato

The quiche recipe and the pulled pork one from last week never ended up getting photographed because they were just wolfed right down after long work days. On the weekend though, we took the time to make the Maple Ginger Turkey Breast from Clean Eating and mashed sweet potatoes from Allrecipes.com. The entire home smelled like Thanksgiving and thankfully we thought both the items were really tasty and relatively easy to make. I think I’ll tuck these recipes away for fall, especially the mashed sweet potatoes, because they were just so creamy and delicious!

Marinated Steak and Salad

On Wednesday this week we had to get up early to take our puppers Sally to doggy daycare. While Lenny made the trek out to their place, I marinated some steaks for us to have for dinner. This Marinated Steak recipe from Big Oven was a delicious complement to a salad with berries, feta, and strawberry vinaigrette. It was super simple and one we’ll probably have again sometime in the future. There is often a lot of garlic and onion seasonings that I can’t have in steak sauce so finding a different way to flavour the meat is always welcome!

Week 13 Meal Plan

Well after nearly 5 weeks of contractors, Monday will hopefully mark our last day with having people in to fix our home. We’re looking forward to return to a bit of a slower pace in the evenings as well as to our bank accounts. I’ve spent a bunch of time on Pinterest this week and have found a lot of pins from Damn Delicious. She promises simple ingredients and elegant dishes, so here’s for hoping it is exactly what I’m looking for!

Monday: Homemade Pizza

Tuesday: One Pot Cheesy Smoked Sausage & Pasta Skillet from Yellow Bliss Road

Wednesday: Hamburgers topped with grilled pineapple and OKA cheese, homemade fries

Thursday: Greek Quesadillas from Damn Delicious

Friday: One Pot Nacho Beef Skillet from Damn Delicious

Saturday: Dinner out.

The Best Homemade Burgers

The Best Homemade Burgers from The Prairie Homestead proved to be quite tasty! From all the things we made from last week’s recipes, this one gets the highest rating for taste by far. We also lucked out that there were family sized trays of 50% ground beef 50% ground pork on sale, so we’ll likely be having these burgers again in the near future after we defrost the remaining portions.

Week 12 Meal Plan

This past week we were really good at sticking to our meal plan. It’s amazing what a difference a commitment to sticking to a spending budget for the week can make to your resolve to stick to a meal plan. Here’s for hoping we make it two weeks in a row with making 100% of the meals we plan to make!

Sunday: Maple Ginger Turkey Breast from Clean Eating, mashed sweet potato, frozen mixed veg

Monday: Salmon (seasoning, or recipe still to be determined), potatoes, and peas

Tuesday: Green Chile Spinach Quiche from allrecipes.com

Wednesday: Marinated Steak from Big Oven and salad with berries, feta, and strawberry vinaigrette

Thursday: Tacos

Friday: Crockpot Pulled Pork from Lauren Greutman and corn

Provided that I can find some ripe bananas at the grocery store, or in the depths of our freezer, I also hope to make these Oatmeal Banana Apple Breakfast Muffins from Rock Recipes for snacks.

Spaghetti Carbonara

The Spaghetti Carbonara from Budget Savvy Diva was great on the budget but was sort of bland in taste. I also didn’t really realize I was making a dinner without any vegetables at all so it ended up not being very filling. I might try this recipe again in the future with ham bacon (we used turkey bacon like the recipe called for) and throw some peas or some other vegetable in it, for added taste and nutritional value.

Sweet ‘n Spicy Asian Glazed Grilled Drumsticks

The Skinnytaste.com website is one of my favourites for meal ideas. Gina’s recipes are always relatively easy to make, are healthy, and super tasty. She also offers great pointers such as her video on this recipe for how to remove the skin from chicken drumsticks; her paper towel method helps you save so much time! Mushroom Lasagna with Bechamel Sauce

In our 2011 trip to Italy, Lenny’s nonna cooked us the best bechamel sauce lasagna on the planet. Since then, I’ve been inspired by like 100 Pinterest posts to give it a try.

The recipe I settled on following (mostly) was the Artichoke Mushroom Lasagna with Bechamel Sauce from Green Healthy Cooking. I ended up using more mushrooms in lieu of the artichokes because I’ve never really liked them unless they are deep-fried…

The lasagna turned out pretty well but it was a far cry from anything as delicious as nonna made. Given the number of dishes required to make this meal, this will be the only bechamel lasagna that I will ever make, so I guess we just have to go back to Italy sometime soon to experience the real thing again!
