Campfire Series: Calzones!

We were supposed to go camping this past weekend, but ultimately decided that living in our own home without air conditioning this year has been camping enough for us so far. It didn’t stop me though from thinking about foods we have made in the past while camping though so I thought I would share some with you! Conveniently, last summer we were dog-sitting our pal Digby while camping so I took pictures of pretty much everything, including making some of our most successful meals!

On of our favourite things to eat outside of camping is pizza, so I did my best to create something in that realm suitable for a campfire. Using Pillsbury biscuit dough, we were able to make this happen! Here are the steps to follow:

On aluminum foil, spray some non-stick spray and then spread out some of the dough to make a circular shape.

Add your sauce and toppings. Bonus points if you remember to shred the cheese ahead of time and then put it into portioned containers before leaving for camping, like we did! It made many meals a lot easier to make.

Fold the dough in half and crimp the foil around the calzones. Cook them until you think they are done!

One Pot Nacho Beef Skillet

I love nachos. I mean, who doesn’t love nachos? This One Pot Nacho Beef Skillet recipe from Damn Delicious is a perfect approach to dinner-worthy nachos and even has roasted red peppers, tomatoes, and corn to up the health factor. This recipe took about 20-30 minutes to make, and makes enough for about 6 servings. Next time, I think I’ll maybe go with 3/4 cup of basmati rice instead of 1 cup, but otherwise, the ratios for all the other ingredients were spot on.

One Pot Cheesy Smoked Sausage & Pasta Skillet

The One Pot Cheesy Smoked Sausage & Pasta Skillet from Yellow Bliss Road turned out pretty well! I’d classify this one in the 20-minute-delicious-weekday meal category. I think I’ll tuck it away to try again sometime in the future with the proper Italian-seasoned sausage though; The grocery store that I went to didn’t have a lot of options so I went with a traditional Polish sausage, and it just wasn’t quite right. The combination of milk, canned diced tomatoes, and chicken stock was quite delicious and fragrant. Definitely a meal worth trying!

A “Pre-cheese” shot. I am always SUPER excited (actually) to not have to wash the colander. This recipe has you cook the pasta in the liquid but then to keep it and not strain it. 😀

Marinated Steak and Salad

On Wednesday this week we had to get up early to take our puppers Sally to doggy daycare. While Lenny made the trek out to their place, I marinated some steaks for us to have for dinner. This Marinated Steak recipe from Big Oven was a delicious complement to a salad with berries, feta, and strawberry vinaigrette. It was super simple and one we’ll probably have again sometime in the future. There is often a lot of garlic and onion seasonings that I can’t have in steak sauce so finding a different way to flavour the meat is always welcome!

Quite the summer meal, finally!

Spaghetti Carbonara

The Spaghetti Carbonara from Budget Savvy Diva was great on the budget but was sort of bland in taste. I also didn’t really realize I was making a dinner without any vegetables at all so it ended up not being very filling. I might try this recipe again in the future with ham bacon (we used turkey bacon like the recipe called for) and throw some peas or some other vegetable in it, for added taste and nutritional value.

Zucchini Frittata and Jill’s Hash Brown Casserole

There’s nothing quite like the smell of a delicious breakfast on a morning that you get to sleep in. This weekend I prepared a baked zucchini frittata and Jill’s Hash Brown Casserole from Campbell’s Kitchen. While I wasn’t a fan of the frittata much (it probably needed more salt and/or cheese), the hash brown casserole was fantastic. I’ve had a similar casserole a couple of times at work breakfast potlucks and was excited to make it for Lenny to see what he thought. Luckily for me, he liked it too!

Summer Grilled Vegetables

This was a self-made recipe that turned out really well and would be perfect for a long weekend meal. I’ve never been one to spice things easily on my own, by thankfully my husband Lenny is a superstar at this. For the roasted vegetables, we mixed all of the following together and then tossed them in a grill basket like this one:

  • 2 zucchini
  • 1 red pepper
  • 1 green pepper
  • baby portobello mushrooms
  • olive oil
  • salt & pepper

It’s a welcome alternative to our standard side of sweet potato fries and is helpful to use up random amounts of vegetables left over in the fridge.

Ham and Penne Skillet

Tonight I made the Ham and Penne Skillet from Julie’s Eats and Treats. In hindsight, it would have been a great meal to photograph and make in one of our Le Creuset dishes, so if you have one and end up making this recipe, you should totally do that! Aside from accidentally letting the dish boil over and managing to get milky chicken stock on and in ALL FOUR BURNERS, it was a pretty easy dish to make. Finding ham steaks for meals like this have been a real game changer; The estimated 30 minute time from start to table, was pretty accurate.

Maple-Crusted Salmon

Lenny has been quite busy preparing for his defense April 21, and last week when I asked what traditional Easter foods he might like to have, he was only half listening and heard “what Eastern foods would you like?” This joke has carried on for a few days but today we finally made his requested Easter dish: fish on Good Friday.

The Maple-Crusted Salmon from Foodie Crush proved fairly easy to make, tasted delicious, and required minimal clean up. I will warn you in advance, if you skip putting the fish on tin foil you will be sorely upset with the amount of clean up. Using the recommended tin foil on the other hand, made clean-up a breeze!

Finally, some good natural light for a dinner photo! I love that the days are becoming longer. Feta, instead of butter, on steamed vegetables is one of my new favourite things to do.

Slow Cooker Jambalaya

This week I made the Slow Cooker Jambalaya from Budget Bytes. I accidentally put in 1 tbsp of cayenne pepper instead of 1 tbsp of paprika (they looked the same at 7am…). It fortunately (?) made a large number of portions, but Lenny loved having something spicier so that worked out well. I tend to find many slow cooker meals mushy, but the cured meat and rice stood up really well so if this is something that also prevents you from using your slow cooker more often, you may want to try out this recipe. I foresee revisiting this recipe in the future with a more appropriate amount of spice!
