Week 21 Meal Plan

I recently got the Thug Kitchen 101 Cookbook as a gift and I have *loved* every recipe that I’ve tried thus far, although so far, we’ve only tried two recipes! ūüėÄ

This week I’m planning on trying some more, and am hopeful that we will be having a bunch of tasty meals.

Week 20 Meal Plan

This week has got on to a better start with a holiday for Monday. We got a lot of yard work and house work done so today should be filled with a lot of TV watching :D. We also have already done all of the grocery shopping, and miraculously, were able to find everything that we need to make this week’s meals, including figs! Happy long weekend everyone!

Here’s our plan for the week:

Snack: Blueberry and Polenta Scones from Yoga Eats

Sunday: Chickpea Bolognese from Vanilla Bean
Monday: Fig & Goat Cheese Pizza from Ambitious Kitchen
Tuesday: Stir Fry with Rice Noodles from Natasha’s Kitchen
Wednesday: Dinner out
Thursday: Prosciutto and Fig Salad from Skinnytaste and Sausages
Friday: Goat Cheese and Sun Dried Tomato Pasta from Cooking for Keeps
Saturday: Cauliflower Mac & Cheese from Damn Delicious

Week 19 Meal Plan

These past few weeks have been tricky at work, which translates into not wanting to take time to meal plan or grocery shop. This week though, we have a plan, and all the groceries to stick to said plan, so I decided to share!

Monday: Charcuterie board dinner

Tuesday: Dinner out

Wednesday: Stir Fry with Rice Noodles from Natasha’s Kitchen

Thursday: Goat Cheese and Sun Dried Tomato Pasta from Cooking for Keeps

Friday:¬†BBQ’ed burgers and corn on the cob

Saturday: Grilled chicken sausages and roasted summer vegetables

Week 18 Meal Plan

This past week, the mostly-vegetarian meal planning went pretty well, so we’re planning on continuing that this week. I revisited some of my old meal plans, and one of my favourite cookbooks for inspiration. Here’s what we’re planning on making:

Snack: Amazing Flour-Less Brownies from Skinnytaste (a repeat from my Week 2 Meal Plan)

Monday: Grilled Portobello Mushroom Roll-Ups from an old Clean Eating magazine; the recipe is also posted at https://www.recipezazz.com/recipe/grilled-portobello-mushroom-roll-ups-22992.

Tuesday: Sweet Potato Curry from Eating in the Middle page 61

Wednesday: Veggie dogs and corn on the cob

Thursday: Spaghetti Squash Pad Thai from a printed recipe from a friend

Friday: Black Bean Burgers from Eating in the Middle page 54

Saturday: Dinner out

Week 17 Meal Plan

This week I’m aiming to eat less meat. Two of my family members have recently faced this challenge and in the spirit of supporting them, my meal plan will be a bit more vegetarian in nature.

Sunday: Frittata

Monday:¬†Peach Arugula Salad from Skinnytaste and grilled Yves “sausages”

Tuesday: Soup and grilled cheese

Wednesday: Grilled zucchini and vegetarian burgers

Thursday:¬†A third meal planning attempt for homemade pizza – goat cheese, prosciutto (on Lenny’s half), spinach

Friday: Dinner out at SunFest

Hope you’re enjoying the lovely weather by getting outside to do some grilling too!

Week 16 Meal Plan

OUR AIR CONDITIONING IS BEING INSTALLED TOMORROW! I haven’t been this excited for a contractor visit, ever. And I don’t think I’m exaggerating. I’m also therefore committed to preparing more meals at home this week now that I don’t have the heat as an excuse.

This week I used the first strategy that I mention on 5 Ways to Start Your Weekly Meal Plan and went to our local farmer’s market for inspiration. Here’s what we picked up!

Mutsu apples, snap peas, Brussels sprouts, strawberries, and salad greens

This is pretty much going to be a daily snack, minus the whipped cream… maybe…

We also bought items for a nice no-cooking-required Sunday dinner: 4 different types of salami, snap peas, a Mutsu apple, two different types of cheeses, and a sourdough loaf of bread. We enjoyed this with a white from Featherstone Wineries from Niagara, and it was all just so perfect!

We should do a charcuterie board dinner more often.

Here is our plan for this week:

Monday:¬†BLT’s and Berry¬†Salad with Goat Cheese¬†from Skinnytaste

Tuesday: Chicken sausage and Grilled Brussels Sprouts from Skinnytaste

Wednesday: Slow Cooker Chicken Curry from Gluten Free with LB

Thursday: Burgers and grilled vegetables

Friday: Homemade pizza with goat cheese, prosciutto, spinach

Saturday: Dinner out

Week 15 Meal Plan

Well you win some, you lose some: this past week’s was a total bomb when it came to sticking to our meal plan. We ended up making 2/6 of our planned meals, so there’ll be some repeats in this week’s meal plan. It was just too hot to think by the time we got home from work and turning on the oven was definitely not appealing. Hopefully with the cooler temperatures this week, we’ll get back on track. Here’s the plan:

Monday: One Pot Stuffed Pepper Casserole from Damn Delicious

Tuesday: Homemade pizza

Wednesday: Charcuterie board

Thursday: Chicken fingers and homemade fries

Saturday: Dinner Out

While not overly ambitious, I think this is a realistic plan we can stick to, so please send some positive vibes our way!

Week 14 Meal Plan

Well just when we thought we were done with contractors, we got confirmation that our air conditioner is toast. And we cannot replace the air conditioner without replacing the furnace as well (ironically enough, which will include drilling new venting pipes into our newly poured concrete wall!). This week will therefore include many quick, low-heat inducing meals.

Monday:¬†Hamburgers topped with grilled pineapple and OKA cheese, homemade fries (I forgot to pick up the all-important hamburgers to make this meal last week…)

Tuesday: Chicken Avocado Ranch Burritos from Damn Delicious

Wednesday: Sandwiches

Thursday: One Pot Stuffed Pepper Casserole from Damn Delicious

Friday: Homemade pizza

Saturday: Steak and salad [probably using the same marinade as from earlier this month]

Week 13 Meal Plan

Well after nearly 5 weeks of contractors, Monday will hopefully mark our last day with having people in to fix our home. We’re looking forward to return to a bit of a slower pace in the evenings as well as to our bank accounts. I’ve spent a bunch of time on Pinterest this week and have found a lot of pins from Damn Delicious. She promises simple ingredients and elegant dishes, so here’s for hoping it is exactly what I’m looking for!

This is what we’re planning on cooking this week:

Monday: Homemade Pizza

Tuesday: One Pot Cheesy Smoked Sausage & Pasta Skillet from Yellow Bliss Road

Wednesday: Hamburgers topped with grilled pineapple and OKA cheese, homemade fries

Thursday: Greek Quesadillas from Damn Delicious

Friday: One Pot Nacho Beef Skillet from Damn Delicious

Saturday: Dinner out.

Week 12 Meal Plan

This past week we were really good at sticking to our meal plan. It’s amazing what a difference a commitment to sticking to a spending budget for the week can make to your resolve to stick to a meal plan. Here’s for hoping we make it two weeks in a row with making 100% of the meals we plan to make!

Sunday: Maple Ginger Turkey Breast from Clean Eating, mashed sweet potato, frozen mixed veg

Monday: Salmon (seasoning, or recipe still to be determined), potatoes, and peas

Tuesday: Green Chile Spinach Quiche from allrecipes.com

Wednesday: Marinated Steak from Big Oven and salad with berries, feta, and strawberry vinaigrette

Thursday: Tacos

Friday: Crockpot Pulled Pork from Lauren Greutman and corn

Provided that I can find some ripe bananas at the grocery store, or in the depths of our freezer, I also hope to make these Oatmeal Banana Apple Breakfast Muffins from Rock Recipes for snacks.

Hope you all have a fantastic week!
