Week 13 Meal Plan

Well after nearly 5 weeks of contractors, Monday will hopefully mark our last day with having people in to fix our home. We’re looking forward to return to a bit of a slower pace in the evenings as well as to our bank accounts. I’ve spent a bunch of time on Pinterest this week and have found a lot of pins from Damn Delicious. She promises simple ingredients and elegant dishes, so here’s for hoping it is exactly what I’m looking for!

This is what we’re planning on cooking this week:

Monday: Homemade Pizza

Tuesday: One Pot Cheesy Smoked Sausage & Pasta Skillet from Yellow Bliss Road

Wednesday: Hamburgers topped with grilled pineapple and OKA cheese, homemade fries

Thursday: Greek Quesadillas from Damn Delicious

Friday: One Pot Nacho Beef Skillet from Damn Delicious

Saturday: Dinner out.

Week 12 Meal Plan

This past week we were really good at sticking to our meal plan. It’s amazing what a difference a commitment to sticking to a spending budget for the week can make to your resolve to stick to a meal plan. Here’s for hoping we make it two weeks in a row with making 100% of the meals we plan to make!

Sunday: Maple Ginger Turkey Breast from Clean Eating, mashed sweet potato, frozen mixed veg

Monday: Salmon (seasoning, or recipe still to be determined), potatoes, and peas

Tuesday: Green Chile Spinach Quiche from allrecipes.com

Wednesday: Marinated Steak from Big Oven and salad with berries, feta, and strawberry vinaigrette

Thursday: Tacos

Friday: Crockpot Pulled Pork from Lauren Greutman and corn

Provided that I can find some ripe bananas at the grocery store, or in the depths of our freezer, I also hope to make these Oatmeal Banana Apple Breakfast Muffins from Rock Recipes for snacks.

Week 11 Meal Plan

Ahhhh a long weekend — My favourite part of the summer! I feel so on the ball after a big day of chores on Saturday: we cleaned the first floor windows outside, vacuumed and cleaned the glass & dash stuff inside the car, did a couple loads of laundry, mowed and trimmed the front lawn, went to our favourite lunchtime spot (The Black Walnut Bakery), vacuumed the whole house (thanks Lenny!), cleaned the upstairs bathroom (thanks Lenny!), and did the weekly grocery shopping. Oh, and I went for a 4km run and pooped Sally right out! Hopefully the weather holds out for being able to do some gardening over the next two days, otherwise, we’re still in excellent shape for our spring cleaning.

Here’s what we’re planning on eating over the next few days:

Sunday: Artichoke Mushroom Lasagna with Bechamel Sauce from Green Healthy Cooking…  I plan on substituting asparagus for the artichokes though

Monday: Sweet ‘n Spicy Asian Glazed Grilled Drumsticks from Skinnytaste with broccoli and rice

Tuesday: Grilled sausages and corn on the cob

Wednesday: Spaghetti Carbonara from Budget Savvy Diva

Thursday: Frozen pizza and a side salad

Friday: The Best Homemade Burgers from The Prairie Homestead and homemade french fries

I also hope to make some homemade apple muffins, from a written out recipe, to snack on throughout the week.

Week Ten Meal Plan

This weekend and the next weekend are all quite up in the air in terms of what we’re doing and where we’ll be, so I’m only planning on meal planning for Monday-Friday today.

Monday: Zucchini frittata and Jill’s Hash Brown Casserole from Campbell’s Kitchen

Tuesday: Turkey casserole from an old recipe

Wednesday: Slow-Cooker Shredded Beef Tacos from Gimme Some Oven

Thursday: Pizza on the Grill, using a tutorial from Amanda’s Cookin’… if I’m feeling adventurous enough!

Friday: Dinner out

Week Nine Meal Plan

Well after a week and half’s worth of emergency foundation repairs, we’re starting to resemble a bit of normalcy again in our household. I’m hoping that this will feel like a week where we feel “back on track” and so I am looking forward to sharing this week’s meal plan with all of you! It’s kind of an anomaly for me to only try one new recipe in a week, but hopefully having some of our more standard meals contributes to a stress-reduced week.

Snacks for the Week: Hard boiled eggs, tortilla chips & salsa, crackers & cheese, apples, bananas, baby carrots

Sunday: Leftover chili; still eating some things out of the freezer and this will be one of those “Gosh, I hope it’s actually chili” meals…

Monday: Pre-made ravioli and the Jamie Oliver 7-Veg Tomato Sauce

Tuesday: Pizza bagels

Wednesday: Dinner out

Week Eight Meal Plan

This week’s meal plan is brought to you by Heather’s sister Keely!

Hi Everybody!! I have to admit, I am the meal planner in our relationship but have somehow managed to hit the husband lottery when it comes to doing the actual cooking. We have a handy dandy chalkboard on our fridge – I find the meals & what page of cookbook or where on Pinterest to find the recipe … the rest is history. This is a rare week where we don’t have a lot going on, so we’re going to enjoy it by eating all of the favourite things. Here are some of the go-to meals in our house; I could probably just put this meal plan on repeat for the next 100 years:

Snack: Turkey Crescent Rolls – Ok, It’s not that exciting. But it is so easy. And Quick.  The only problems are trying not to overindulge when they’re fresh out of the oven and to save some for the rest of the week.

Monday: Zucchini stuffed chicken, and home made sweet potato fries.  It’s a bit of work, but it is so worth it.

Tuesday: Taco Tuesday – Duh! Lately we’re onto the Mahi Mahi Fish Taco Recipe from the Skinny Taste Cookbook… I don’t know what Mahi Mahi is, so we usually use tilapia. Complete with the avocado sauce, and lime slaw, I could eat at least ten of these. Pairs well with a certain light lime beer beverage or a margarita.

Wednesday: Garlic Chilli Shrimp Pasta – We’ve morphed this recipe from somewhere but it involves a bit of marinating, a bit of spicy, and a whole lot of delicious: shrimp, garlic, broccoli and whatever sort of noodles we have in the cupboard.

Thursday: Greek wraps. OMG. They are a bit of work, but now that BBQ Season is here, it is important to eat as much as we can because it will be winter before we know it. We marinate for a few hours and skewer the chicken, peppers and red onion. Add all of that to a fresh pita and top with lettuce, feta, tzatziki (thank you spell check!) and have lemon rice on the side. YUM!

Friday: Homemade Pizza… We got a pizza stone 6 months ago and while we still haven’t perfected the crust, we are getting SO close… you can’t go wrong with Friday night pizza night!

Saturday: Going out for dinner at a great local establishment.

Sunday: Mexican Lasagna. Exactly like it sounds. Take two things that you can add anything too – Mexican food and lasagna – and put them together for something that tastes amazing.  Bonus- it is perfect for Monday lunch leftovers in case you haven’t gotten your butt in gear for next week yet.

This week I’ll be taking some of my own advice from 5 Ways to Start Your Weekly Meal Plan and will be eating through some items found in the depth of our freezer. It is supposed to be sunny and an average of 20 degrees Celsius each day here, so there are also two BBQs planned — it’s the most wonderful time of the year! Here is what’s on the menu this week:
